Ingredients: -
• 125g tamarind (املی)
• 50g jaggery (گڑ)
• ½ tsp chopped ginger (ادرک)
• 2 tbsp sugar (چینی)
• ½tsp salt (نمک)
• ½ tsp black salt (کالا نمک)
• ½ tsp black pepper powder (کالی مرچ پاوڈر)
• ½ tsp red pepper powder (لال مرچ پاوڈر)
• ½ tsp cumin seeds (زیرہ)
• ½ tsp fennel powder (سونف پاوڈر)
Recipe: -
1. In a pan, combine 2 cups of water and tamarind. Boil for 2-3 minutes.
2. Add ginger and jaggery. Mix well and cook for some time.
3. Strain the mixture to remove the tamarind seeds.
4. Blend the thick tamarind paste with some tamarind water in a blender. Blend thoroughly.
5. Add the remaining tamarind water and blend again.
6. Strain the mixture properly.
7. Heat 1 tbsp oil in a pan. Add cumin seeds and fry for a few seconds.
8. Add tamarind pulp. Mix and let it boil.
9. Add the remaining spices, mix well, and cook until it thickens.
10. Add sugar and cook for a few more minutes.
11. The Tamarind Sauce is now ready.
