MASALA BHINDI - The BEST Dish You'll Ever Eat!

Bhindi (ladyfinger / okra) is undoubtedly one of the most common yet mouthwatering vegetable used in asian cooking that is prepared in a spiced tangy base of onion, and tomatoes with the magical essence of ground spices. This recipe is not only great in flavor but also tastes highly delicious and healthy. This side dry and tantalizing curry goes very well as a side with rice. But having it with roti will make you experience real blissful spices that no italian cuisine will give you.

1. Bhindi (lady's finger / okra) is a vegetable that is highly rich in fiber, which helps with digestion and stomach problems.

What you’ll need:

1. Bhindi (ladyfinger / okra): 500g
2. Onion: 250g (finely chopped)
3. Tomato: 3 medium (deseeded, chopped, and pureed)
4. Cream: 3 tablespoons
5. Oil: ½ cup
6. Tamarind pulp: 3 tablespoons
7. Ginger garlic paste: 2 tablespoons
8. Green chili: 3 (slit lengthwise or finely chopped)
9. Hot spices (garam masala): 1 teaspoon
10. Turmeric powder: 1 teaspoon
11. Salt: 1 teaspoon
12. Red chili powder: 1 teaspoon
13. Cumin seeds: 1 teaspoon
14. Coriander powder (cilantro): 1 teaspoon

Instructions to make:

Prepare bhindi (ladyfinger / okra):
1. Wash bhindi (ladyfinger / okra) very well under running water and drain them. (you can also set it aside to air dry).
Tip: make sure there is no moisture on the bhindi (ladyfinger / okra). Otherwise, it will become slimy and ruin the recipe.
2. After completely drying, chop both ends of the bhindi (ladyfinger) and cut it into ¾ inches pieces.

Prepare bhindi masala:
1. Start by heating oil in a pan and adding onion to it.
2. Sauté onion on a medium flame until golden brown. It will take 5-7 minutes.
3. Next, sauté ginger garlic paste into the onion oil and add a splash of water. Cook until the raw smell of the garlic goes away.
4. After that, add the tomato puree to the pan and mix well. Cover the pan and cook for 2-3 minutes on medium flame.
5. Stir in salt, red chili powder, cumin seeds, turmeric powder, hot spices (garam masala), coriander powder (cilantro), and green chilies.
6. Cover and cook for 2 minutes. After 2 minutes, you will notice specks of oil on top of the masala.
7. Add cream and tamarind pulp into the pan and stir well.
8. Again, cover and continue cooking for at least 5 minutes until the oil separates from the sides.
9. Add bhindi (ladyfinger) into the pan, cover, and cook on medium to low flame till they are soft. It will take 15-20 minutes.
10. Switch off the flame and transfer it to the bowl.
11. Serve finger-licking masala bhindi with roti or rice.
