Hey yall! Freeze ahead breakfast recipes is the second video that came from my recent poll. I have two plant based meals ready to show you. I have found that making my breakfast ahead of time for the week has made getting the day started a breeze! I want to share that with you.

Omelette Roll-Up
1-1/4 cup of chickpea flour
1-2/3 cup of water
1 tsp of baking powder
1 tsp of garlic powder
1 tsp of black salt (for an eggy flavor)
Desired omelette add ins ( mushrooms, onions, garlic etc)
Tortillas of choice
Mix well. Add 1/2 cup at a time to a non stick skillet or griddle on medium heat. When the omelette has cooked about 30 seconds, add your toppings. Place a tortilla on top. Cook until it is no longer shiny. Flip and allow tortilla to brown a bit. Remove from heat. Let it cool off and enjoy! You can freeze for an easy breakfast through the week.
Sweet Potato Muffins
1/2 cup cooked sweet potato
1 cup of oat flour
1/2 cup of maple syrup
1/2 cup of plant milk
1 tsp of vanilla
1 egg replacer or flax egg
1 tsp baking powder
1 tsp baking soda
1 tsp of cinnamon
1 tbsp of nut butter ( can replace with applesauce to remove this fat)
Mix dry ingredients. Add wet ingredients. Add to a non-stick muffin pan. (Makes about 10- 12 muffins). Cook on 350 F for 25-30 minutes or until a knife comes out clean. Enjoy!
Can freeze for easy breakfast.
