In this video I show you how to make Starch Solution freezer meals so that you can cook ahead for later! This is the intro to my new series Cook Smarter Not Harder.

Recipe:
Cream of Mushroom Soup

2 onions
1/2 a shallot
2 cloves garlic
2 pounds of mushrooms, diced
4 Tbsp oat flour
4 cups of veggie broth
1 cup of plant milk
1/4 cup of cashews ( optional )
1/2 - 1 tsp of thyme or to taste
1/2 tsp salt

Sauté onion, garlic and shallot in 1/2 cup of veggie broth until clear and tender. Add in the mushrooms and allow all the water to cook out and then stir in 1/2 tsp salt or to taste.

Once the water has cooked off the mushrooms, add the 4 Tbsp of oat flour and stir in well. Cook for a few minutes to cook off the raw flavor of the flour.

Then add 3 cups of veggie broth. Bring the soup to a bubble.

Gradually add in the 1 cup of plant milk.

Next add in the cashew cream made by blending 1/4 cup of cashews with 1/2 cup of veggie broth. ( Cashew cream is optional)

Allow to gently simmer for 10 minutes until thick and creamy.

Serve. I garnished with green onion.

Broccoli and Cheese Casserole

1.5 cups brown rice
1/2 a not chicken bouillon cube
2 heads of broccoli
8 0z potatoes
1-2 carrots
1 onion
1/4 nutritional yeast
1 tsp onion powder
2 tsp garlic powder
2.5 cups of cream of mushroom soup from above
Salt to taste
