In the upper right corner of the 3D Viewport in Blender are a series of 4 buttons. These represent the Viewport Shading modes with Solid being the default. The downward pointing arrow to the right opens up the options.
Cavity controls the brightness of the edges between faces. When active it allows for the brightness of ridges and the darkness of valleys to be controlled. Values vary between 0 and 2.
The Cavity options do not alter the final render in any way.
