No-Bake Almond Butter Cheesecake with Cherry Chia Jam - Recipe from Plant-Based Health Coach Becky
Welcome! Today we dive into week 2 of my partnership with Mountain Freshies - a Colorado CSA share.
I’ve been loving the cherries we’ve had so far this season! What a treat. And the sweet treat we make today is:
oven-free
plant-based vegan
gluten-free
refined sugar free!
comes together in about 20-30 min (however it does need to set in the fridge for at least 4 hours)

*RECIPE: No-Bake Almond Butter Cheesecake with Cherry Chia Jam * Serves 6-8 (for a 9 in round pan, double the recipe)

CRUST Ingredients (note: the below should be accurate for a 6 in pan, in the video I made double this :))
1/2 C. Rolled Oats
1/2 C. Sunflower Seeds (or any nut / seed)
2 TBSP Melted Coconut Oil
1 TBSP Coconut Sugar
1/2 TBSP Pure Maple Syrup
Healthy pinch of Sea Salt
FILLING Ingredients:
3/4 Cup Almond Butter (or sub Cashew, Sunflower, etc)
1/2 Cup Full Fat Coconut Milk
3 TBSP Pure Maple Syrup
1/4 Cup Coconut Oil, melted
1 TBSP Lemon Juice or 1/4 tsp Apple Cider Vinegar
1 tsp Pure Vanilla Extract
1/4 tsp Sea Salt
JAM Ingredients:
1 Cup Cherries, sliced with pits removed
2 TBSP Pure Maple Syrup
2 TBSP Lemon Juice or Orange Juice
2 TBSP Chia Seeds
Directions:
1. Prepare the crust by adding all ingredients to a food processor and pulse until it starts to combine and the mixture sticks when you press it between your fingers
2. Press it into your 6 in round springform pan and set in the fridge
3. Make the filling by adding all filling ingredients to a bowl and whisk together until thoroughly combined, then pour into your pan on top of the crust
4. Let set in the fridge at least 4 hours
5. Meanwhile, prepare your jam by adding all the cherries, juice and maple syrup to a sauce pan over low-med heat until it simmers.
6. Lower the heat and cook another 5-10 min, stirring occasionally. Mash with a potato masher or fork to your desired consistency, then add chia seeds and stir
7. Pour jam in a glass container and then set in the fridge once cooled.
8. After the cheesecake has set in the fridge, remove the springform and slice, then serve with the jam on top.
