Today's dish is inspired by flavors from Italy travels! This dish is packed with fresh ingredients and tons of flavor. It's a delicious salad on it's own, a side dish, or a complete meal (I have some great plant-based vegan protein options to add to it within the video).
This comes together quickly and it will be a showstopper for your palate! It’s also a great way to use stale old bread.

🍅 RECIPE: Summer Tomato Salad with Fried Breadcrumbs and Capers 🍅
Ingredients:
Fresh Tomatoes
Dressing: 1/4 Cup Olive Oil, 1 TBSP Balsamic Glaze, Reduction or Vinegar, 1 TBSP Tomato Paste, Tomato Jam or diced Sun-dried Tomatoes, pinch of Salt and Pepper
Stale Bread - I used 3 small slices for ~1 cup of breadcrumbs
1 TBSP or more Olive Oil
2 TBSP Capers
Toppings (Optional): Thin sliced red onion, cucumber, fresh basil
Directions:
1. Heat up a frying pan on the stove over med-low heat
2. Slice tomatoes and add to a rack or plate, sprinkle with sea salt
3. Whisk all of the dressing ingredients together
4. Make breadcrumbs by pulsing bread in a food processor, tear into tiny piece with your hands or slice into very small pieces
5. Add 1 TBSP olive oil, or enough to coat the bottom of the frying pan, along with breadcrumbs and capers. Turn up heat slightly and toss together. Cook until golden brown, watching and turning carefully so it doesn’t burn.
6. Meanwhile, prepare your optional toppings by thinly slicing
7. Assemble the tomatoes, topped with cucumber and red onion, dressing, breadcrumbs and tear basil
