Today's Recipe: Peach Corn Tacos with Avocado Lime Crema!!

Today’s recipe is lovely for PEACH season and adds a delicious sweet twist to typical tacos.

RECIPE: Peach Corn Tacos with Avocado Lime Crema
Ingredients:
1/2 Red Onion
1 Bell Pepper
Oil, Veggie Broth or Water for sautéing
1 Ear Corn
1 Peach
Sea Salt to taste
1 Avocado
1 Lime
1/3 cup Unsweetened Plant-Based Yogurt (I used +kitehill)
1/2 tsp Garlic Powder
pinch sea salt to taste
Your favorite corn tortillas (or make a burrito, salad bowl etc.)
Optional taco toppings: black or kidney beans, tomato, radish, micro greens, cilantro
Directions:
1. Chop up veggies and peach
2. Add onion and pepper to a hot pan along with a little oil or veggie broth and sauté a few minutes before adding the corn and peach. Add a little sea salt to taste
3. Meanwhile, heat up beans and prep other veggie toppings
4. Make avocado cream by combining avocado, lime, vegan yogurt, garlic powder and sea salt in a small jar or bowl (for immersion blender) or add to a blender, food processor, or mash by hand - blend until smooth
5. Warm up tortillas over the prepared veggie peach filling
6. Add filling and toppings to tortillas
