Why use the whole fruit & veg? 🍌

When we waste food, we also waste all the energy and water it takes to grow, harvest, transport, and package it.

And if food goes to the landfill and rots, it produces methane—a greenhouse gas even more potent than carbon dioxide.

As a vegan, when I see animal parts left on a plate or thrown away, I also think about the animal life that’s been wasted 😔

It’s great to compost, but it’s fun to try using the whole fruit or veggie in new ways in the kitchen! And often times the pieces that we discard, like peels, are safe to eat and have tons of nutrients.

💡 Here are 7 ideas for using your Food Scraps:

🧅 Veggie Scraps: Save your in a bowl or bag in the freezer, when it’s full, make broth by simmering in water for a couple of hours and straining. Great for cooking with or adding to soups, sauces etc.

🥦 Broccoli Stems: Peel and quartern lengthwise, and either chop into smaller pieces and use in stir fries or soups, or freeze for dog “bones”. 🐶 My pups are obsessed!

🍌 Banana Peels: Add to a large jar and cover with water, let sit for a day and use to water your plants. OR marinade in a smoky sweet sauce and air fry or pan fry for banana peel “bacon” (YES you can eat banana peels, I freeze bananas with the peels on, and just cut off the hard top & bottom before adding to smoothies)

🍓 Strawberry Tops: Safe to eat along with the berry! Or add to smoothies, juices etc.

🥕 Carrot Tops: Chop up and add to stir fries or salads (though they can be a little bitter, it’s great to blanch before using), OR make carrot top pesto, the best.

🍋 Citrus peels: Dehydrate, grind up in a blender or food processor and store! Add to dishes that need a little citrus zing. OR add to water and let sit for flavored water.

🥔 Potato, carrot or beet peels: add a little oil and salt, then air fry or bake in the oven until crispy! Delicious chips!
