Chicken is cooked with onions n potatoes with green chilli n black pepper to spice up...simmered in coconut milk
Ingredients
Chicken 1/2 kg, with bone/boneless
Onion 2 , thinly sliced
Potato 2 cubed
Carrot 1 medium size sliced
Green peas 1/2 cup
Cauliflower florets 10
Ginger garlic green chilli paste 1, 1/2 tbsp
Coconut milk 1 ,1/2 cup thick
Spices
Cardamom 5
Star anise 2
Cinnamon stick 1
Jathipathri 1
Bayleaf 1
Clove 6
Black pepper 10 crushed
Fennel seeds 1/4 tsp crushed
Salt to taste
Coconut oil for drizzling
Preparation
1. Marinate chicken with ggg paste, curry leaves
and spices for 30 minutes
2. Add thinly sliced onions and potato
3. Dilute 1/2 cup of coconut milk with 1/2 cup of water
4. Add this to chicken n cook for 15 minutes
5. Cook on medium flame
6. Now we can add carrot n peas
7. Once chicken is done , add thick coconut milk 1 c
8. Turn off the flame
9. Add coconut oil on top with a sprig of curry leaf
10. Chicken stew is ready
