There are a lot of options for cooking okroshka – on water, on whey, on kvass, on kefir, on mineral water. The most traditional, delicious and simple version of cooking okroshka is okroshka on sour cream, with the addition of kvass. If there is no kvass at hand, you can cook okroshka on water - it is very simple, affordable and no less delicious.
Products and their approximate quantity:
Potatoes 400- 500 gr.
Eggs – 4 pcs.
Cucumbers – 300 gr.
Sausage, ham or any boiled meat – 300 gr.
Radish – 200 gr.
A bunch of onions
A large bunch of dill
Tomatoes (optional)
For refueling:
For 1 liter of unsweetened kvass or chilled boiled water -
250 gr. sour cream of any fat
content 1 tablespoon of mayonnaise
1 tablespoon of mustard
1 teaspoon of sugar
1 teaspoon of 9% vinegar or lemon juice (or to taste), if okroshka on kvass – vinegar is not required
Salt to taste
Ground black pepper (optional)
