*Hello everyone!* 🌿

Today was a day full of creativity and relaxation. I spent some time sewing cushions and a rug for the traditional bed I recently bought, giving my garden a unique and traditional vibe. The sewing project went really well, and I’m excited to share the results with you!

Alongside my sewing, I made a delicious and easy Kashk Eshkeneh for lunch. I’ll walk you through the recipe and the step-by-step process of making this comforting dish.

At the end of the day, I also prepared Joojeh Kebab over the fire for dinner, which turned out amazing! I hope you enjoy the video.

*Kashk Eshkeneh Recipe:*

*Ingredients:*
1 medium onion, chopped
2 tablespoons dried mint
1 cup of kashk (whey)
2 cups of water
Oil as needed
Salt and pepper to taste

*Instructions:*
1. *Sauté the Onion:* Sauté the chopped onions in a little oil in a pot until golden.
2. *Add Spices:* Add turmeric, salt, and pepper, and sauté for a bit longer.
3. *Add Mint:* Stir in the dried mint.
4. *Combine Kashk and Water:* Mix the kashk with boiling water, stir well, and add it to the pot.
5. *Let it Simmer:* Let the Kashk Eshkeneh simmer for a few minutes until it thickens and is ready to serve.

*Tip:* You can substitute yogurt for kashk, in which case the dish is called "Mast Eshkeneh." The preparation is the same, but it’s better to use a bit more yogurt. Making both Kashk Eshkeneh and Mast Eshkeneh is super easy and delicious—a quick and comforting Iranian dish ready in just 5 minutes.
