INGREDIENTS for shortbread dough (for 11 x cakes of 24 cm in diameter):
520 g flour
150 g of cold butter
8 g baking powder for the dough
16 g vanilla sugar
220 g of sugar
1 pinch of salt
2 Eggs (medium size from the refrigerator)
200 g cold sour cream (I have 24% fat)
1 tbsp cocoa for chocolate dough
1 tbsp flour for light dough
a little flour for sprinkling
bake each cake in a preheated oven at 200 °C (400 °F) WITH CONVECTION!!! at the average level, about 5-6 minutes
INGREDIENTS for the cream:
400 ml of cold whipping cream (min. 30% fat content)
16 g vanilla sugar
80 g of powdered sugar
24 g cream thickener
250 g cold mascarpone
250 g cold cottage cheese 9% fat (or 250 g cream cheese)
