Large pore sourdough bread for beginners. Delicious, with a crispy crust, soft and chewy inside. Large porous, 75% humidity.

Ingredients
80 g starter (100% or “no discarding”)
400 g white flour
300 g water (290 g immediately + 10 g for salt)
8 g salt

Bake at 250C (482F) -20 minutes with a lid, then reduce the temperature to 230C (446F) - and bake again without a lid for 20-25 minutes
