Cooking recipe and ingredients:

3.5 kg beef shank.
Rinse well with cold water.
Fill with water.
Bring to a boil.
After the water boils, skim off the foam.
Cover and cook over low heat for 3.5-4 hours.
In 2.5 hours.
Add 1.5 tablespoons of salt.
Black peppercorns.
3 bay leaves.
1 onion.
1 carrot.
Cover and simmer over low heat for another hour.
4 hours later.
Strain the broth through cheesecloth.
Allow the broth to cool completely.
Separate the meat from the bones and remove excess fat.
Grind the meat into fibers.

1/3 teaspoon sugar.
1/4 teaspoon black pepper.
1 tablespoon lemon juice.
1 egg.
Whisk until thick.
This is a very tasty homemade mayonnaise.
Add to broth.
Mix well.
1 boiled carrot.
You can make beautiful flowers out of it.

Pour 100 ml of stock into the bottom of the glass bowl.
