This bread, in my opinion, is the most aromatic - with a characteristic rye taste and spicy notes of caraway. You can use either rye or wheat sourdough for this bread. In either case, you get an amazing bread that will fill your home with the aroma of a bakery.
Ingredients:
260 g white flour - protein 11.7 - 12.7%
140 g rye flour
265 g water
80 g wheat or rye sourdough starter 100%
10 g malt extract (barley or rye)
8 g salt
5 g caraway seeds
