Fiddlehead fern or simple fiddlehead is an edible fern that can be found in the forest, near rivers. The new fronds are picked and usually made into a salad. The stems are crunchy and is a green that is rich in vitamins A and C.
Ingredients
1 tali of pako
1 salted egg
1 tomato
1 red onion
For dressing:
1/4 cup vinegar
1 tbsp sugar
1/2 tsp ground black pepper
Procedure:
1. In a pot, fill halfway with water and wait to boil. Prep ingredients by slicing onion, tomato, and salted egg. Prepare an ice bath (bowl with cold water and ice).
2. Wash fern and trim bottom ends, then cut into 2-inch pieces. When water is boiling, black leaves for 30 seconds then immediately transfer into waiting ice bath. The ice bath will stop cooking process and the fronds will retain its bright green color. Then drain or put in a salad spinner.
3. Prepare dressing by mixing all ingredients together until sugar dissolves.
4. Plate salad by putting fern on a dish and top with sliced onion, tomato, and salted egg. Serve with the dressing on the side.
