Ruperto's Resort and Restaurant in Binalonan, Pangasinan is famous for its Binalonan longganisa. This longganisa only uses lean pork meat and sun-dried pork intestine casing. The resto's chef shared this recipe.
Ingredients:
1 kg lean ground pork
1/4 cup minced garlic
1/4 cup soy sauce
1 pork cube
2 tbsp salt
1 tbsp ground black pepper
Sun-dried pork intestine casing
Procedure:
1. Mix all ingredients together in a bowl.
2. Let mixture rest and marinate in the fridge for at least one hour.
3. After resting, stuff mixture into casing tightly and divide sausages in 3-inch pieces. Tie with kitchen twine in between pieces or segments.
4. To cook, put sausages in a pan with water and let it boil, turning sausages when necessary. Wait until all liquid evaporate, add a little bit of oil and fry until brown. (Since the sausage only uses lean pork, there is little or no fat to render)
