These not-so-stuffed stuffed peppers are super simple, and they reheat really well for leftovers too! These are incredibly delicious and have become a dinner staple in our house. We originally got this recipe from a Hello Fresh order (if you haven’t tried them I absolutely recommend it!!) and LOVED it! Since then, we’ve slightly modified it to our preferences. The Sriracha sour cream is MY FAVORITE and I add it to sooo many different things!

🫑Ingredients
Bell peppers (any colors) x 3-5
Celery – approximately 5 ribs
1 bunch of green onions
Cooking Spray/Cooking Oil
2 pounds ground pork
Cajun Seasoning
Pepper
Chicken Bouillon
Water
1.5 cups of jasmine rice (we typically have a little extra cooked rice leftover)
Pepper jack cheese (optional)
🌶️Sriracha Sour Cream (optional):
Sour cream
Sriracha (or preferred hot sauce)
Water
📝 Stuffed Pepper Recipe
1. Wash bell peppers and slice in half. Remove the seeds and stem.
2. Lightly spray both sides of the peppers with cooking spray and season with your favorite all-purpose seasoning.
3. Clean celery and green onions. Finely chop both. Set the chopped green onion greens aside for later.
4. Cook peppers for approximately 20 minutes at 400 degrees.
5. Start cooking jasmine rice (based on your rice’s directions) – typically takes about 15
6. Add about a tablespoon of oil to a pan. Add in chopped celery and green onion (white part only). Sauté for about 7 minutes.
7. Add 2 pounds of ground pork to celery and green onion. Season with Cajun seasoning and pepper. Cook thoroughly until all pink is gone. Drain excess grease.
8. Stir in 1 large spoonful of Better Than Bouillon (chicken concentrate) and one cup of water.
9. Add cooked jasmine rice. Stir in slowly to determine the ration of meat/rice that you prefer.
10. Spoon rice/meat mixture into the cooked pepper halves and top with pepper jack cheese (optional).
11. Place in oven for approximately 5 minutes or until pepper jack cheese is melted.
12. Top with sriracha sour cream and garnish with green onion greens.
🌶️Sriracha sour cream: Mix sour cream and sriracha (ratios based on personal spice preference). Slowly add water until it reaches a thin and creamy consistency.
