This is a well-known dish in the southern part of of Luzon, using coconut cream, coconut milk and a lot of red hot chili. One cup of rice is never enough when you have Bicol Express on the table.
Ingredients:
1 1/2 kg pork belly
2 tbsp cooking oil
1 whole garlic
1 big white onion
3 tbsp shrimp paste
1 tsp salt
1/2 tsp black pepper
12 pcs red thai chili / siling labuyo
12 pcs green thai chili / siling pangsigang
1 can coconut cream
1 can coconut milk
1 cup water
