How to add more columns in Google Sheets beyond the default 26 columns (past column Z), as well as how to insert columns in between existing column is shown in this video.

Adding Single Columns:

Go to the "Insert" tab.
Under "Columns," select either "Insert 1 column left" or "Insert 1 column right" to insert a single column to the left or right of the currently selected column, respectively.

Adding Multiple Columns:

Select the desired number of existing columns where you want to insert new columns.
Right-click on any of the selected columns.
In the context menu, select "Insert X columns," where X is the number of columns you want to insert eg 100. This will add the specified number of new columns to the right or left of the last selected column.
