Wiped tin is the traditional lining for copper cookware because it provides a naturally anti-stick, nonreactive, nontoxic cooking surface that typically holds up to a 15-20+ years of regular cooking before it needs retinning again. A traditional copper pan can be restored more or less eternally this way, making it the longest-lasting, most sustainable style of cookware.

Quality French copper pans are pricey, but they can permanently replace your nonstick-coated cookware, and the lifetime cost of ownership with retinning every couple decades will be lower than replacing most "ceramic" nonstick pans when the coating fails every couple years, or premium Teflon coated pans when they fail every 3-5 years. Copper pans will never end up in a landfill like nonstick coated ones inevitably do.

To shop various sizes of Mauviel and Lefevre oval and round gratins I have in stock that I can retin to order: https://northcoastcopper.etsy.com/lis...

A few other styles of vintage French copper pans are available below. Message me on Etsy, any of my social media pages, or email [email protected] if there's something not listed that you're looking for, I have a much larger inventory than what's listed and can show you "before" photos of options available to reserve. https://northcoastcopper.etsy.com
