Wiped tin is the traditional lining for copper cookware because it provides a naturally anti-stick, nonreactive, nontoxic cooking surface that typically holds up to a couple decades or more of regular cooking before it needs retinning again. A traditional copper pan can be restored more or less eternally this way, making it the longest-lasting, most sustainable style of cookware.
Quality French copper pans are pricey, but they can permanently replace your nonstick-coated cookware, and the lifetime cost of ownership with retinning every 2-3 decades will be lower than replacing most "ceramic" nonstick pans when the coating fails every couple years, or premium Teflon coated pans when they fail every 3-5 years. Copper pans will never end up in a landfill like nonstick coated ones inevitably do.
The oval pan in the video is an unmarked Mauviel ("Made in France" stamped) 30cm gratin. This is one of the pan shapes that gets the most use in my kitchen because it's a replacement for a regular baking/roasting pan that releases food and cleans easier than aluminum or stainless ones, while also performing great on the stovetop for e.g. browning meat before it goes in the oven, deglazing pan drippings and reducing for a sauce or gravy, making a bechamel for gratinee, or sauteing oblong foods like long fish fillets or asparagus.
