Pickled artichokes in live oil: the easy recipe for a tasty side-dish

INGREDIENTS
Artichokes
1l water
500ml white wine vinegar
Lemon
Bay leaves
Peppercorns
2 garlic cloves
Oregano
Red chili pepper
Salt
Olive oil

METHOD
1. Peel the artichokes until you reach the softest leaves. Cut the stem and the tip.
2. In a bowl, add water and half a lemon. Add the artichokes, squeeze the lemon, and let rest for 30 minutes.
3. Cut each artichoke in half and remove the center.
4. Pour a liter of water and half a liter of white wine vinegar into a pot.
5. Add a bay leaf and peppercorns. Add the artichokes and boil for 10 minutes.
6. Drain and dry the artichokes.
7. In a bowl add several broken garlic cloves, red chili pepper, and oregano, and mix well.
8. Add the artichokes and cover with the spices.
9. Place the artichokes in a glass jar. Fill with olive oil and boil to vacuum seal.
10. Serve with bread.
