In today’s video, I will be making our traditional Bajan Conkies also known as ’Stew Dumplings”
This is a favorite delicacy that we look forward to every year and we make them on November 5th which used to be called “Guy Fawkes Day” through November 30th in celebration of our Barbados Independence Day.

PREP AHEAD -
BANANA LEAVES/ALUMINUM FOIL (APPROX. 8X8 OR 8X10 SQUARES)
WASH THE BANANA LEAVES WELL UNDER RUNNING WATER.
IN A LARGE POT FILL WATER HALF WAY, BRING TO A BOIL AND TURN THE HEAT OFF.
ADD THE BANANA LEAVES AND STEEP FOR 20-30 MINUTES.
REMOVE EACH LEAF ONE AT A TIME AND WIPE DRY WITH A DISH CLOTH.
THIS PROCESS IS TO MAKE THE LEAVES PLIABLE WHEN FOLDING AND TO KILL ANY MICROSCOPIC PARASITES.
IT IS ALWAYS BEST TO USE THE BANANA LEAVES IF YOU CAN SOURCE THEM, IT GIVES THE CONKIES A DISTINCT TASTE.
WHEN STEAMING YOU GET AN AROMA FROM THE BANANA LEAVES AS WELL, SO NOSTALGIC.
RECIPE
(MAKES 17 CONKIES)
2 CUPS YELLOW CORNMEAL
4 CUPS GRATED PUMPKIN
2 CUPS GRATED COCONUT
1 1/2 CUPS SWEET POTATO
1 CUP AP FLOUR
1 CUP BROWN SUGAR (More if desired)
1 CUP CARNATION MILK (Nuke in microwave or on stove top)
3/4 CUP RAISINS
2 1/2 TSPNS ALLSPICE
1 TSPN FRESHLY GRATED NUTMEG
2 TSPNS PURE VANILLA EXTRACT
2 TSPNS ALMOND EXTRACT
3 OZ. SALTED BUTTER (MELTED)
3-4 OZ. SHORTENING/COCONUT OIL (MELTED)
STEAM FOR APPROXIMATELY 1 - 1/2 HOURS AND THE CONKIE IS FIRM.
