Creamy Pasta salad:
1 lb elbow macaroni
2 stalks peeled and sliced celery
1/2 red onion medium dice
6 spring onions sliced
1 red bell pepper medium dice
1 cup grated carrot
1 1/2 cups corn kernels removed
1/3 cup chopped dill pickles

Creamy Dressing:
1 cup mayonnaise dukes or kewpie
1/2 cup Greek yogurt
2 tbsp apple cider vinegar with 1 tbsp white sugar
2 tbsp yellow mustard
1 tbsp dijon mustard
2 tbsp onion powder
2 tbsp pickle relish
1 tbsp garlic powder
1-2 tsp black pepper
Salt to taste I used 2 tsp

Italian deli-style pasta salad:
1 lb fusilli pasta
8 oz cubed provolone cheese
6 oz thinly sliced salami
6 oz thinly sliced Capocollo
6 oz thinly sliced hot pepperoni
6 oz olives of choice
2 cups of sweet cherry tomatoes
1/3 cup sliced pepperoncini
1 small red onion julienne
1/2 cup chopped Italian parsley
12 leaves of basil

Italian Dressing:
1/4 cup red wine vinegar
3/4 cup olive oil
3-5 Calabrian chilis (optional)
2 oz parmesan cheese
1/2 tsp Italian seasoning
1/2 tsp dried oregano
5 sprigs of fresh thyme
1 tsp Dijon mustard
1 tsp honey
1/2 tsp chili flakes
1 large or 2 small cloves of garlic
Salt and pepper to taste
