Greek Gyros Chicken Marinade:
4 pounds of chicken thighs pounded out
6 garlic cloves Microplaned
2 tbsp red wine vinegar
5 tbsp lemon juice
1/3 cup Greek yogurt
1/4 cup olive oil
1 1/2 tbsp dried oregano
1 tbsp onion powder
1 tsp ground cumin
1 tsp ground coriander
2 tsp sweet paprika
2 tsp chili flakes
1 tbsp kosher salt
2 tsp black pepper

Tzatziki sauce
1/2 English cucumber small dice
1 lemon juiced
1 tbsp olive oil
1 1/2 cups Greek yogurt
2 tbsp chopped dill
2 cloves of Microplaned garlic
1 tsp kosher salt
Fresh ground black pepper

Greek vinaigrette
1/4 cup red wine vinegar
2 tbsp lemon juice
3/4 cup olive oil
1 tsp dried oregano
1 tsp Dijon mustard
