An aromatic blend of lemon, pepper and oregano that will leave your family wanting more!INGREDIENTS
• Cayenne pepper • Salt and pepper • Lemon juice • Large potatoes • 1 cup chicken broth • Lemon zest • Oregano • Parsley
 
METHOD

Cut the top and bottom end off a potato.
Cut in two halves.
Put them in a bowl full of water to wash away the starch.
Dry the potatoes and add pepper, oregano, salt and cayenne pepper.
Put olive oil in a baking dish and place the potatoes on top with the seasoned side down. Then sprinkle over some more oil and season the top side.
Bake for 20 minutes at 200ºC (400ºF). Take out and turn over each potato slice. Let stand for 10 minutes.
Add lemon zest and lemon juice to the chicken broth and mix.
Pour the liquid over the potatoes, add some oregano, salt, and more pepper and bake for 15 minutes at 200ºC (400ºF).
Flip the potatoes and bake for 15 more minutes.
Add olive oil and a little parsley.
