This coffee gets boiled 3 times in the sand before being served!
It's certainly not the usual espresso, so what is it?
It is called Turkish coffee and was invented at least 500 years ago.
History tells us that as early as 1454 this drink began to spread throughout Yemen, after the importation of coffee from Ethiopia and reaching Constantinople around 1550.
Legend instead narrates of an energy drink given to Muhammad by Allah, in the desert, which helped him beat the heat and fight 40 knights.
Turkish coffee actually contains a high amount of caffeine, about double what we are used to drink!
The preparation ritual of this drink is almost divinatory and very peculiar: in a small copper long-handled pot called cezve, water, coffee and sugar are boiled and cooled three times.
On the streets of Türkiye, this process takes place directly in the hot sand. The sand generates a uniform heat and its intensity can be managed by sinking the cezve more or less deeply.
In this way the coffee ground quickly settles on the bottom and you will always have a hot and thick coffee.
Thanks to the residues left on the bottom of the cup, caffeomancy originated: the coffee grounds are therefore used to read one's future.
