Which Direction? Clockwise is the way to wrap Teflon plumber's tape. This is for right handed threads which is the majority of projects you will encounter. For left-handed threads you would do the opposite and wrap it counter clockwise.
Another key thing to help prevent it from spinning or bunching up on you is to wrap it tightly after you go around one time. This will help press it into the threads of the pipe, holding it in place.
