Hi everyone! I really hope you enjoyed todays video, this is one of my favourite recipes to make for parties. If you try it out let me know how it goes!
Ingredients:
10 Eggs
2 tubs of 475g each of Mascarpone cheese at room temp
2 packs of Italian Savoiardi cookies
3 Cups espresso at room temp
1 cup of Amaretto Liqueur
26 tbsp white sugar (one container of 6 tbsp, 2 containers of 10 tbsp)
Cocoa Powder unsweetened
Recipe:
1) Mix cooled espresso, 6tbsp of sugar, and chosen liqueur in a dish and set aside
2) Separate 10 Eggs
3) Add 10 tbsp of sugar to egg whites and whip to soft peaks
4) Add 10 tbsp of sugar to egg yolks and beat till pale in colour and ribbon-like in texture
5) Fold beaten egg yolks into whipped egg whites in 2-additions
6) Add mascarpone-cheese in 2-additions to the egg mixture, mixing lightly on low speed with a hand mixer
7) Dip each Saviordi cookie into the coffee mixture briefly and line the base of the chosen container (cut cookies to fit if needed)
8) Spread ¼ of the egg-cheese mixture (1/2 if one large tin instead of two smaller tins) over the base layer of cookies
9) Repeat steps 7 through 8 to form another layer of the cake
10) Sprinkle top with coco powder, cover with foil, and refrigerate (preferably over night)
