Here's a quick video on how to make a Gibson. This pre-Prohibition cocktail is the cousin to the Martini, only it has two distinct characteristics. One, it was always made without bitters. Two, after Prohibition, it adopted a pearl onion as its signature garnish.
Before Prohibition, the drink was almost always made 50/50, gin to vermouth. However, I like it slightly drier. Years ago I made it extremely dry, but more recently, I've been making it 3:2, which is how Tom Bullock made it in his 1917 book, The Ideal Bartender.
Recipe:
1.5 oz (45ml) Gin
1 oz (30ml) Dry Vermouth
garnish Pearl Onion
Stir with ice. Strain into chilled glass. Garnish with onion.
