60g (6tbsp) vegetable oil
60g butter
240g (12 tbsp without top) wheat flour
55g (5 tbsp without top) cocoa
10g (1.5 tsp) soda
3g (1/2 tsp) salt
12g (1 tbsp) table vinegar 9%
Cream
340g cream 30–35%
120g dark chocolate with a cocoa content of 50%
15g (1.5 tbsp) Cognac or Brandy (optional)
Glaze
80g dark chocolate with a cocoa content of 50%
100g cream 30–35%
Alcohol is optional.
