Homemade ginger beer is easy to make with a little patience and the right ingredients. By following these simple steps, you'll be sipping on delicious homemade ginger beer in no time! In this video, Katy Jo "SpiritBird" shares her easy and delicious recipe.
What you will need
(1) 1 gallon container or (2) growlers.
Fliptop Bottles
Organic Ginger
Organic Cane Sugar
Organic Lemon Juice (or Lime and Lemon)
Salt
....and a little bit of curiosity and time to experiment!
Starting A Ginger Bug from Scratch
This process is simple, it just takes a week or so to build up a brand new ginger bug. In a clean 1 quart glass jar, add 2 cups of water, 3 TBS finely chopped raw organic ginger and 3 TBS of Sugar. Raw organic cane sugar works well. Cover the jar loosely, or with a cloth. Set it in a cool, dark and dry spot.
Add 1 TBS of grated Ginger and 1 TBS of Sugar each day, preferably at the same time, for the next 5 to 7 days. Continue this process until you can see bubbling at the top. Don't rush this step, you need a strong and active Ginger Bug for good Ginger Beer! If your Ginger Bug isn't bubbling, keep adding Ginger and Sugar until it does.
Making The Ginger Syrup Concentrate
Chop up enough fresh organic ginger ( you can leave the skin on) to get 1 cup and about 3 TBS. A food processor is very helpful. The smaller the chopping, the spicier your Ginger Beer will be.
Add 4 Cups of water, 1 Cup of the chopped Ginger, 1-1/2 Cup of Cane Sugar, and a tsp of Salt to a pot. Stir and bring that to a soft boil. Let simmer for 5 minutes, then turn off and cool over night.
Making the Brew
You will need a 1 gallon glass jar or a few glass growlers to hold the brew.
Place the room temperature Ginger Syrup in the 1 gallon container, approximately 4 cups.
Add 1 Cup of the active Ginger Bug (room temperature and recently feed).
Add 1/2 to 1 cup of organic lemon juice. ** Do Not use the lemon juice in the squeeze bottles, they have preservatives that can harm the bug).
Cover and set aside for 3-5 days in room temperature, dry and dark spot. Check the jar or growlers daily, they may need burped.
Don't forget to feed and replenish your Ginger Bug Bottling and Conditioning.
Fill flip top bottle to condition "carbonate". Fill close to the top with a little airspace.
Add a dab of honey or maple syrup before closing up.
store for 3-5 days, after that you can refrigerate it for weeks.
