Breakfast: Steel Cut Oatmeal with Berries
Ingredients
2 cups milk
2 cups water
1 cup steel cut oats
1 tsp cinnamon
1 tsp vanilla extract
1 cup frozen mixed berries
1-2 tablespoons honey

Directions:
Into a skillet or pot add the milk and water, let it steam then slowly whisk in the oats. Add the cinnamon and vanilla extract. Let it come to a soft boil, lower the heat to the lowest setting, cover and cook for 30-40 minutes. Add more milk or water if needed. Add the frozen berries and stir. Cover and cook until the berries have softened and warmed through, another 5 minutes. Stir in the honey and serve with a drizzle of milk, optional.

Lunch: Cheese and Pepperoni Pizza

Snacks: Jamaican Beef Patties

Dinner: Skillet Chicken and Rice
Ingredients:
6 boneless skinless chicken thighs
Cajun seasoning
1 tablespoon oil
1 tablespoon butter
1/2 onion, diced
1 red bell pepper, diced
3 celery stalks, diced
6 garlic cloves
1 cup basmati rice, rinsed
2 cups broth
2 bay leaves

Directions:
Season the chicken thighs liberally on both sides with Cajun seasoning. Heat the oil and butter in a skillet and sear the chicken thighs for about 4 minutes on each side. Transfer the chicken to a plate and add the diced onion, bell pepper, celery and garlic. Cook until softened, about 5 minutes. Add the rice and 1 tablespoon of cajun seasoning, stir to combine. Slowly add the broth and bay leaves, add the chicken on top. Let it come to a boil the reduce heat to low. Cover and let cook for 15 minutes. Remove from heat and uncover. Remove chicken to a plate and discard the bay leaves. Fluff the rice and let sit for a few minutes before serving.

Succotash
Ingredients:
2 tablespoons butter
1/4 cup diced onion
2 garlic cloves, minced
2 cups fresh or frozen corn
2 cups fresh or frozen lima beans
1 cup grape tomatoes, halved
salt, pepper and garlic powder to taste
fresh basil

Directions:
Into a skillet melt the butter and add the diced onion, cook for about 4 minutes then add the minced garlic, cook for another minute. Add the frozen corn and lima beans along with your seasoning. Cover and cook for a few minutes until veggies are warmed through. Add the tomatoes and basil and cook for a few more minutes uncovered.
