5-star meal from scraps?
Based in New Delhi, 70-year-old chef Davinder Kumar was always bothered by food waste when so many people were going hungry. So he decided to walk the talk by finding ways to incorporate them into dishes. He was so successful that he now creates a menu for the food waste from 12 restaurants and kitchens at the 5-star hotel. The waste is segregated by flavour, colour and texture and then processed to create delicious and nutritious dishes.
