• beef - 12 oz | 350 g
• broccoli - 1 lb | 450 g
• ginger - 2 tsp
• garlic - 2 cloves
Marinade Ingredients:
• soy sauce - 1 tbsp
• cooking oil - 1 tbsp
• cornstarch - 1 tsp
• baking soda - ⅓ tsp
Sauce Ingredients:
• soy sauce - 3 tbsp
• rice vinegar - 1 tbsp
• sugar - 1 1/2 tsp
• cornstarch - 1 tsp
• water - ⅓ cup
For broccoli:
• salt - 1 tsp
• cooking oil - 1 tbsp
• boiling water - 4 cup | 1 L

📙 Preparation:
1. Cut the meat across the grain into long slices approximately 0.5 cm thick, holding the knife at an angle. Separate the broccoli into florets, cutting larger ones in half or into quarters. Finely chop the ginger and garlic.
2. In a small bowl, combine the sliced beef, 1 tbsp of soy sauce, 1 tbsp of cooking oil, 1 tsp of cornstarch, and ⅓ tsp of baking soda. Mix thoroughly and let it marinate for 10-15 minutes.
3. In a large bowl, prepare the broccoli: add 1 tsp of salt and 1 tbsp of cooking oil, pour boiling water over it, and mix well, ensuring the water covers the broccoli. Leave it for 1 minute. Then, transfer the broccoli to cold water, cool it down, and drain it in a colander.
4. In a small bowl, prepare the sauce by mixing 3 tbsp of soy sauce, 1 tbsp of rice vinegar, 1.5 tsp of sugar, 1 tsp of cornstarch, and 3 fl oz | 100 ml of water. Thoroughly mix all the ingredients.
5. Heat a pan over high heat, add 1 tbsp of cooking oil, and stir-fry the beef for 4-5 minutes until golden brown. Transfer the cooked meat to a bowl.
6. Add garlic and ginger to the skillet and cook for 1 minute over medium heat. Add the broccoli and stir-fry together for 1-2 minutes over high heat. Add the beef back to the skillet, mix all the ingredients well, then pour in the sauce. Cook together for an additional 2-3 minutes, stirring the ingredients until the sauce thickens.
7. Serve the beef with broccoli over rice, sprinkling toasted sesame seeds and scallion on top.
