This is my PCI Passthrough setup using Parsec streaming to Linux instead of an extra monitor.
I use 2 monitors but only recorded the Parsec one. With parsec i can use Windows games as a Window inside Linux seamlessly.

Rig details:
i9-7900X (12/20 threads passed through/pinned)
64GB DDR4 (48GB passed through
Geforce 1080 (passed through)
Geforce 1030 (for host)
VM on m2 SSD drive (qcow, not passed through) with 3x other SSD passed through and raided using storage spaces inside VM.
Host system is Antergos (Arch) running a few docker containers.
Still have some problems with Audio quality but otherwise everything runs well. Sound didn't record properly so I added some royalty free music.
