Universal dough for dumplings and vareniki
"Tasty and elastic"
4 eggs
1.5 tsp salt
2 tbsp. l vegetable oil
400 ml water, 2 cups
1 kg flour, +-, (until elastic and unsticking from hands + 300 g for shaping)
Mix for 5 minutes with hands or a "hook" mixer
Minced meat
-1 kg chicken
-1 kg pork
-200 g lard
-2 pcs onions
-1 pc head of garlic
-Salt, pepper
For making juicy dumpling mince, for every 500 g mince:
-500 g mince
-100 ml cold water
-100 ml cold milk
