SMOKED KILLER PASTA!!! If you follow italian food trends, you've probably heard of SPAGHETTI all'ASSASSINA or KILLER Spaghetti. From its humble beginnings as a local favorite in Puglia's capital city of Bari, the dish has morphed into an international hit among foodies in the past couple of years. This is a Recipe that breaks all Pasta Rules!!!
Ingredients for 4 people:
0,9lb/400g of spaghetti.
0,9lb/400g of tomato sauce.
2 spoons of tomato paste.
1 spoon of smoked paprika.
1 spoon of chilli pepper powder.
2 garlic cloves.
2 dried chili pepper.
Extra virgin olive oil.
Salt.
1USqt/1l of Water.
Method:
Prepare a broth with 1USqt/1l of water, 2 spoons of tomato paste, 1 of smoked paprika, 1 of chilli pepper powder, 10,5oz/300g of tomato sauce, 0,4oz/12g of salt and bring to a boil, then cook for 5 minutes.
In a pan with sauté the garlic and the chilli pepper with oil; add the tomato sauce and bring it to temperature. Remove the chilli pepper and throw down the spaghetti; spread them as much as possible and let the toast. Once the crust is formed, turn gently without breaking them.
When the crust has formed more or less evenly, add 2 ladles of tomato broth, not on the pasta, but on the side of the pan. The pasta should not drawn! Once completely absorbed the broth, wait 10 seconds and add more. Repeat until the pasta is cooked, about 8/10 minutes.
Serve naked and row.
