To Make Idli Podi
Oil - 2 1/2 Tsp
Chana Dal - 1/2 Cup
Urad Dal - 1/4 Cup
Peanut - 1/4 Cup
Roasted Chana Dal - 1/4 Cup
Red Chilli - 10 Nos
Kashmiri Red Chilli - 10 Nos
Grated Coconut - 1 Cup
Garlic Cloves
Few Tamarind
Rock Salt - 1 1/2 Tsp
Asafoetida Powder - 1/2 Tsp
Sugar - 1 Tsp
Method:
1. Take gingelly oil in a pan and add chana dal and urad dal.
2. Roast them for about a minute and then add peanuts. Roast them until they are golden brown in colour.
3. Add roasted chana dal and roast for 2 mins. Remove them from the pan and cool them down.
4. To the same pan, add gingelly oil again and drop in the red chillies along with Kashmiri red chillies. Roast until they change in colour and remove them from the pan.
5. Take oil in the same pan again and add grated coconut, garlic cloves and tamarind bits.
6. Roast until they are all golden brown in colour and then remove them from the pan.
7. Put in the roasted red chillies in a mixer jar and grind them into a fine powder.
8. Then add in the roasted dal mixture in two instalments and keep grinding to make sure they are all well blended.
9. Lastly, add in the coconut mixture, rock salt, asafoetida powder and sugar. Grind it all into a fine powder.
10. Tasty and flavourful Idli podi is ready to be served with hot idlies and ghee.
