Gin Gin Mule cocktail recipe
A creation of Audrey Saunders. She considers her uncarbonated, homemade ginger beer a non-negotiable ingredient in the recipe as it contains less sugar than store bought... but it still makes a delicious drink with a store bought carbonated ginger beer. Ensure you use one that is dry and spicy. You might consider lowering the simple syrup depending on your choice of ginger beer.

1 mint sprig
1oz / 30ml simple syrup
1.75oz / 52.5ml gin
0.75oz / 22.5ml lime juice
1oz / 30ml ginger beer
Garnish: mint sprig, lime wheel and candied ginger
