Today I smoked some Fellers Ranch Wagyu Beef Cheeks. The original plan was to season with Livia's SPG and let the beef cheeks ride in the Smokin Brothers Pellet Smoker at 250 Degrees for about 3 hours.
At the three hour point, the cheeks were temping between 200-210 degrees, and probing a little tough in spots still. I left them on them on the smoker for a few more minutes then pulled them, as I didn't want to overcook them.
After letting them rest for 10 minutes, we cut into them and while they weren't perfect, they weren't bad at all. There were two fat seams in the cheek that still hadn't quite rendered. I think if I had smoked about 275 degrees for the same time, that fat would have been a little hotter and rendered a little more.
Oh well, not all cooks go perfectly according to plan!! Thanks for watching!
