This vegetable salad with couscous is so aromatic and tasty that will be perfect for a breakfast, dinner or light evening meal. It is cooked out of fresh veggies and dressed with the tastiest sauce. And you can serve this meal as a side dish to any dish whole year. To cook it you will need 15 minutes only. But cook this salad in the amount of one meal, don’t keep it and cook fresh each time.

Ingredients:
• couscous – 200 g
• boiling water – 200 ml
• tomatoes – 200 g
• fresh cucumber – 200 g
• lemon juice – ½
• olive oil – 4 tbsp
• sugar – 1½ tsp
• salt – to taste
• ground black pepper – 1 tsp
• Dijon mustard – 1 tsp
• garlic – 1 clove
• parsley – 15 g
• cilantro – 10 g
• mint – 5 g (leaves of a sprig)
You will need:
• carving board
• salad bowl
• bowl for preparing a sauce

Preparation:
1. Add the couscous into a bowl, salt to taste, add 1 tbsp of olive oil, pour with the boiling water, stir and leave for 5 minutes.
2. Stir well again in 5 minutes. The couscous should be elastic and crumbly.
3. Cut the tomatoes and cucumbers into small wedges, chop the greens.
4. In a small bowl combine the minced garlic, 1 tsp of mustard, 1½ tsp of sugar, 1 tsp of salt, 1 tsp of ground black pepper, ½ lemon juice and 3 tbsp of olive oil. The dressing is ready.
5. Into a big salad bowl add the prepared couscous, cut tomatoes and cucumber, chopped greens and dressing. Combine well.
6. Your vegetable couscous, a perfect salad or side dish, is ready!
