Homemade classic - Russian Smetannik cake - a delicious homemade cake from simple products!

Delicate, soft and soaked Smetannik cake. One of my favorite cakes - it is so soft and tasty with delicate and fresh sourness. The recipe is very simple and affordable!




To make homemade Smetannik cake:

Mold diameter 20-21 cm:

Dough:
• Large chicken egg - 3 pcs.
• Sugar - 150 g
• Sour cream (fat content 20%) - 200 gr
• Salt - 1 pinch
• Flour - 200 g
• Baking powder - 10 g
• Vegetable oil - 1 tbsp.
• Cocoa - 15 g (1 tbsp. with a slide) + 1 tbsp. water or milk in chocolate dough

Sour cream:
• Sour cream (fat content from 20%) - 500 g
• Powdered sugar - 80 g (to taste)
• Vanilla sugar - 20 g
• Instant gelatin - 6 g + 30 g water or milk (optional, so that the cream is more stable)

1. Beat eggs with sugar and a pinch of salt until light and fluffy, within 4 minutes. Add sour cream, vegetable oil. Stir flour with baking powder, sift, mix until smooth.
2. Prepare 2 molds with a diameter of 20-21 cm. Pour half of the dough into one of the molds. Add cocoa and water (milk) to the second half of the dough, stir and pour the chocolate dough into the second mold. Bake for 20-25 minutes in an oven preheated to 170 degrees Celsius.
3. Cut the cakes lengthwise. You can also trim the edges of the cakes, make crumbs from the scraps to decorate the finished cake.
4. With the help of gelatin, sour cream can be made thicker and more stable. Pour water or milk to gelatin and put in a water bath to dissolve.
5. Mix sour cream with powdered sugar and vanilla sugar, stir until smooth. Add melted gelatin, mix well.
6. Collect the cake, put 3-4 tbsp of the sour cream on each layer. Cover the top and sides of the cake with the sour cream and garnish with crumbs. Let the cake soak for 1-2 hours in the refrigerator.
