Evernote - is a more structured note-taking application allowing you to add notes in an orderly fashion, with tonnes of advanced functionality with PDFs and email importing.
Notion - is an open, flexible tool for getting projects and work organised. It's really up to you how you use it, and the editor functions do allow you to essentially start note-taking or document creating here.
