Bacon jam with Carolina Reaper pepper

Ingredients:

400 grams of bacon medium fat
2 large onions
3-4 cloves of garlic
1\2 cups of cane brown sugar
1\2 cups of apple cider vinegar
1\4 cups of maple syrup
1 cup (50 ml) of strong espresso
1 shot (30 ml) of whiskey
1 teaspoon of smoked paprika
1\6 - 1\8 Carolina Reaper pepper

Cut bacon finely and place it in a thick-walled pot or saucepan with high sides. On medium heat, you need to fry the bacon until a bright, slightly crispy crust.

Take out the bacon, spread it on a paper towel - let it dry up a little. In the bacon fat fry chopped onions to transparency, 5-7 minutes. Add Garlic and Carolina Reaper! Mix everything and cook another 3 minutes. Add all the other ingredients, bring it to a boil, reduce the temperature.

Finely cut the bacon and add it to the jam. Stir occasionally. The average time of cooking is 4 hours. I cook 2,5 hours.
