In order to change cover photo without posting,
Open Facebook app on your device. Head over to your profile section and then Tap on cover picture and after the menu appears. Click on "Upload photo". On the bottom section there is "Share your update to news feed" turn it off to prevent it posting on the Facebook news feed.
