Make a Dish Featuring Sambal Oelek at Home (Spicy Sambal Oelek Chicken Stir-Fry)

Ingredients:

1 lb (450g) boneless, skinless chicken breasts, thinly sliced
2 tablespoons vegetable oil
1 medium onion, thinly sliced
1 bell pepper, thinly sliced
1 cup broccoli florets
2 cloves garlic, minced
1 tablespoon ginger, minced
3 tablespoons Sambal Oelek
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
Cooked rice, for serving
Chopped green onions, for garnish
Sesame seeds, for garnish
Instructions:

Prep the Chicken:

In a medium bowl, mix the sliced chicken with 1 tablespoon of vegetable oil. Set aside.
Prepare the Sauce:

In a small bowl, whisk together the Sambal Oelek, soy sauce, honey, rice vinegar, and sesame oil. Set aside.
Cook the Chicken:

Heat a large skillet or wok over medium-high heat. Add the remaining 1 tablespoon of vegetable oil.
Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Stir-Fry the Vegetables:

In the same skillet, add the onion and bell pepper. Stir-fry for 2-3 minutes until they begin to soften.
Add the broccoli florets, garlic, and ginger. Stir-fry for another 2-3 minutes until the broccoli is tender-crisp.
Combine Everything:

Return the cooked chicken to the skillet with the vegetables.
Pour the prepared sauce over the chicken and vegetables. Stir to coat everything evenly. Cook for another 2-3 minutes until everything is heated through and the sauce has thickened slightly.
Serve:

Serve the spicy Sambal Oelek chicken stir-fry over a bed of cooked rice.
Garnish with chopped green onions and sesame seeds for extra flavor and crunch.
