Who doesn’t love a great oat cookie!? This one is healthy AND delicious … and is super simple to make! Today, I'm excited to share a delightful recipe for plant-based oat cookies, perfect for the festive season. These cookies are 100% plant-based, containing no eggs, added sugar, or cooking oil, making them a healthy treat. Join me in the joy of holiday cooking as we dive into this delicious recipe together.
Oat Cookies No Flour Recipe
2 large mashed bananas
2 cups rolled oats
90g apple sauce/puree
1 cup plant-based chocolate chips (white or dark)
1/4 cup raisins
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup plant-based milk (e.g., oat, almond, soy, or coconut)
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a bowl, combine mashed bananas and rolled oats.
3. Add apple sauce, chocolate chips, raisins, cinnamon, vanilla extract, and plant-based milk.
4. Mix the ingredients thoroughly with a spoon or spatula.
5. Shape the cookie dough into tablespoon-sized portions and place them on a baking tray lined with non stick parchment paper.
6. Bake for approximately 20 minutes or until golden brown.
7. Allow the cookies to cool slightly before indulging in the soft, gooey goodness.
